'Lunch Box Dad's' Amazing -- And Healthy! -- Packed Meals For Kids

He goes by “Lunch Box Dad,” and he takes Tupperware, PB&J and veggie sticks very seriously.
Meet Beau Coffron – father of three, husband, businessman, and lunchbox maker extraordinaire.
With the growth of social media, there’s definitely been a trend in creative kids’ lunches, but Beau’s artwork tops them all. It seems there is nothing he cannot do with a few slices of bread, pasta and/or bananas.
The good dad concocts delicious and healthy meals for his kids that also taps into their favorite movie themes, TV cartoons and other fun, children kind of stuff. On his website, Beau notes that his goal is to show families “useful products” and teach them to make creative lunches.

And they’re chock-full of vitamins!
Beau has made paper-bag lunches a thing of the past, and bento lunches everything. As Lunch Box Dad, he’s come to the rescue of what could have been a bland assembly, and made it into a menagerie of awesome. He tells ABC News, “I get most of my inspiration from my kids. This project has really helped me to pay more attention to watch they are watching, listening to, and reading.”
He adds, "Every lunch that you see on my blog has something to do with what they are interested in at the time. If you know kids, you know that their interests change all the time, so there is never a shortage of ideas coming from them.”
Obviously, Beau puts a lot of work into his masterpieces, but we like his attitude. He says, “Some parents watch sports, some go snowboarding, some go to the gym, I choose to do this.”
